Cast Iron Chicken Sausage with Olive and Lemon
Bring a Mediterranean flavor to the table with this zesty chicken sausage recipe, created by our in-house chef.
Preheat oven to 400F with the rack in the center position.
Heat olive oil in a 10 inch cast iron skillet over medium-high heat. When oil is hot, place entire package of Gold Meat Thin Style Chicken Sausage in pan and sear 3 minutes on each side.
Add to skillet crushed garlic cloves, lemon zest, lemon juice, thyme and olives, sauté 2 minutes then add wine. Place lemon slices on top of sausage, transfer the pan to the oven and bake about 10 minutes, until 165F in the center.
Remove from oven and garnish with fresh parsley.
Serve over wild rice and greens.
