Chicken Sausage Stuffed Squash
Bursting with juicy chicken sausage, fresh vegetables and tender spaghetti squash, this filling dish can be served as an entree or a tasty side.
Preheat oven to 400 degrees F (204 degrees C).
Cut squash in half and remove seeds. Combine olive oil and seasoning, brush on each half and place on rimmed baking sheet. Roast in the oven for 45 minutes.
While squash is roasting, cook chicken sausage in a skillet following the package instructions (around 15 minutes).
Slice sausage into bite-size pieces and combine with remaining ingredients in a large bowl.
Once roasted, scrape pulp from squash and combine with sausage and vegetable mix inside of squash.
Serve and enjoy!
