Sausage, Red Onion and Arugula Flatbread

Created by food blogger Authentically Candace, this flatbread recipe kicks things up a notch with peppery arugula, a runny egg and Gold Meat’s chicken sausage. It’s the perfect appetizer, side, or even entree and can be enjoyed at any time of day!

Ingredients:
1 flatbread, such as FlatOut
1 package Gold Meat thin-style chicken sausage with herbs
1/4 red onion
1 handful arugula
1 large egg
1/2 cup mozzarella cheese
olive oil, for basting flatbread and tossing with arugula
1 teaspoon minced garlic
pinch of salt and pepper
Directions:

Grill Gold Meat chicken sausage on grill or in cast iron skillet, for approximately 20 minutes.

Meanwhile, pre-bake flatbread according to instructions on package.

Slice onion and set aside. Toss arugula with a small amount of olive oil and pepper.

Heat up frying pan and cook egg, leaving the yolk runny. Set aside.

Remove flatbread from oven and baste with olive oil, minced garlic, salt and pepper.

Remove sausages from grill or skillet and cut into small pieces.

Top flatbread with mozzarella cheese, slices of red onion and chicken sausage.

Bake for 5-7 minutes, until cheese has melted.

Remove from oven and top with handful of arugula and runny egg.
